This week and on into next week is Cakes!! I have never taught a unit over cakes before but I have had experience teaching different methods involved in making a certain type of cake. There are all types of cakes that fall into 3 categories: shortened (lots of fat; i.e. pound cake, texas sheet cake), unshortened cakes (little or no fat; i.e. foam cakes, angel food cake) and chiffon/genoise cakes (combination of eggs, and some fat; i.e. jelly roll cake). I have made jelly roll cakes before in a class. They are fun and the kids love them, so that is how we are starting out this unit. Tomorrow I demo a pumpkin cake roll with a cream cheese frosting filling and then students make their own. After that lab, we move on to different kinds of cakes that fall into the 3 categories. So, the question again is, what are your favorite kinds of cakes?
I am personally not too much of a cake fan, I love sweets, but can pass on cake. If I had to pick, I really enjoy a great wedding cake that is moist and fluffy and has an excellent frosting on it (if you can tell, I am not quite sure what type of cake or frosting this would be, but I am determined one day to figure that all out)!

I didn't know that there are 3 categories of cakes. To me they're all good and I love to eat them! I agree with you about wedding cakes. It seems that to please a large crowd, such as wedding guests, a lighter, fluffier cake would be most appealing. However, I seem to love the chocolate, fat-filled, sweet ones but I also love angel food cake with a fruit topping.
ReplyDeleteI am a brownie fan myself. Once my mom figured that out when I was a kid, she made me brownies with powdered sugar for my birthday. We ordered a cake for my son's birthday from the grocery store and it was not very good. It had so much frosting that we couldn't quite get to the cake. I agree with you, Leah, about wedding cakes. There has to be a good one out there somewhere!
ReplyDeleteI have a great recipie for an apple cake! I think it would fall in the fat cake category. It has a cup of oil but also has eggs so I am not sure. It gets the rest of its moisture from apples. It is my favorite. A good wedding or b-day cake is also top of the list. I feel that white or vanilla cakes are the only kind to have and I like the whipped topping icing. I hope you enjoy your cake and get to eat some too!
ReplyDeleteI am a chocolate cake with chocolate icing (no nuts!) cake fan. I love cakes, brownies and cookies but I'm definitely not a big fan of pies!
ReplyDeleteWhen we got older, my mom quite making us birthday cakes and moved to ice cream cakes. My favorite ice cream cake is the cookie dough cake from baskin robins...no calories there, huh?!cream cake the best.
I too, am not a big cake fan. I would take either a brownie or ice cream cake over the typical cake. However, in the summer there's nothing like a fluffy angle food cake topped with fresh strawberries!
ReplyDeleteI love your blog. Food is so wonderful, but not so great for the figure at times. I didn't know there were different categories of cakes. I am a fan of cake, but not a huge fan of frosting. I rarely like the frosting on most cakes. German Chocolate cake is my fav with the coconut frosting. I would love to be in your class.
